Serves 4-6 People

Ingredients

 

  • 2 Boneless/Skinless Chicken Breasts

  • 1 Stalk Celery, Finely Diced

  • 1 TBSP Parsley, Finely Chopped

  • 3 TBSP Red Onion, Diced

  • 1.5 TBSP Kacey’s Kitchen Whole Grain Mustard

  • 3 TBSP Mayonnaise

  • ¼ tsp Salt + More for Poaching

  • ¼ tsp Black Pepper

Preparation

-Poach chicken breast in salted water until cooked thoroughly.  Remove from pan & shred. Cool.

-In large bowl, combine chicken, celery, parsley, and onion.

-In small bowl, combine mayonnaise, mustard, salt & pepper.

-Stir mayonnaise mixture into chicken mixture until completely combined.

-Chill for 15 minutes. Serve over crackers or on a sandwich.
